Raj Kachori

Raj Kachori is an Indian street snack. It is in a form of Golgappa but a much bigger size. It is deep fried and then later filled with mixture of potatoes, chickpeas, dahi bhallas and more. It is a mouth watering chaat overflowing with tasty chaat mixture, curd ,chutneys and later topped with sev.

Ingredients:- It makes four kachoris.

For the Raj Kacchori-
2 cups of Semolina ( sooji)
1/2 cup of wheat flour
1/2 cup clarified butter (ghee)
1 cup lukewarm water
1/2 tsp salt
Oil for frying

For Filling:-

2 medium size potato cubed and sauteed till golden in color
1/2 cup boiled chole ( garbanzo beans)
10-12 pcs of papadi dipped in curd
3-4 dahi bhallas (soft and squeezed)
1/2 tsp chilly powder
1/2 tsp kala namak ( Rock salt)
1 tsp chopped green chillies (optional)
1/4 cup chopped cilantro leaves ( hara dhaniya)
1 tsp roasted and crushed cumin seeds
1/2 cup chopped onions (optional)

For serving:-

1/2 cup of tamarind chutne
1/4 cup of mint chutney
1 1/4 cup hunged yogurt
1/2 cup fine sev

Preparation for Kachoris:-

Mix all the ingredients and knead into a firm dough by using a little water at a time.
Keep it hard and firm. Cover with a wet cloth and leave for 30 mins.
Divide the dough into four equal parts. Now roll them into rotis and deep fry in hot oil.
Turn them gently and fry till it becomes crisp and puffy like puris.
Let them cool down.

Assembling the Kachoris:-

Keep one kachori on a plate and a crack a hole in the centre of it.
Fill the kachori with potatoes, boiled chole, sprouts, add spices, papadi and lightly mash the dahi bhallas.
Fill it with 3 to 4 tbsp of yogurt.
Add green chillies and onions, then drizzle with the green chutney, tamarind chutney, and chopped coriander. Finally sprinkle the sev on top.

Serve the yummy kachoris as a evening snack or a tea party snack. Enjoy the delicious chaat from our kitchens to yours.
