Easy Dhokla


A gujrati tea time snack. Made with bengal gram flour, this is a very easy recipe if followed properly will give you the spongy dhokla

Ingredients:-

1 cup - Besan Flour
1 1/2 tbsp Semolina (sooji)
3/4 cup to 1 cup water
1 tbsp lemon juice
2 tsp. sugar
2 1/4 tsp salt
1 tsp. Eno
1 tbsp oil

For Tadka:-
2 tbsp oil
Few chillies
1 tsp - Mustard Seeds
Handful of Chopped Cilantro
5-6 Curry Leaves
Mix 2 tsp of sugar with 2 tsp of lemon juice and 3 tsp of water

Preparation:-
Mix the besan, water,oil, salt, sugar, lemon juice really well until no lumps remain.
Now with the hand blender mix it for another 10 minutes till it becomes fluffy.You will see bubbles forming on top.
Meanwhile,boil water in a big pan/cooker and slightly grease a cake pan. Put a little stand in the water.
Now add eno to the batter and mix it again and finally place it in the boiling water on the stand. Cover and let steam for 30 minutes.
Put a toothpick in the dhokla to check if it is done. It should come out clean.
Once the dhoklas are steamed, let them cool down.

Assembling the Dhokla:-
In a small pan, heat the oil. Add the mustard seeds, curry leaves and green chillies. Once they start popping, add the dhokla and quickly add the sugar-lime water.
Don't mix with the spoon, Toss it in the pan.
Garnish with Cilantro, and serve. 
Enjoy it at tea time or an evening snack..

Raj Kachori

Raj Kachori is an Indian street snack. It is in a form of Golgappa but a much bigger size. It is deep fried and then later filled with mixture of potatoes, chickpeas, dahi bhallas and more. It is a mouth watering chaat overflowing with tasty chaat mixture, curd ,chutneys and later topped with sev.

Ingredients:- It makes four kachoris.

For the Raj Kacchori-
2 cups of Semolina ( sooji)
1/2 cup of wheat flour
1/2 cup clarified butter (ghee)
1 cup lukewarm water
1/2 tsp salt
Oil for frying

For Filling:-

2 medium size potato cubed and sauteed till golden in color
1/2 cup boiled chole ( garbanzo beans)
10-12 pcs of papadi dipped in curd
3-4 dahi bhallas (soft and squeezed)
1/2 tsp chilly powder
1/2 tsp kala namak ( Rock salt)
1 tsp chopped green chillies (optional)
1/4 cup chopped cilantro leaves ( hara dhaniya)
1 tsp roasted and crushed cumin seeds
1/2 cup chopped onions (optional)

For serving:-

1/2 cup of tamarind chutne
1/4 cup of mint chutney
1 1/4 cup hunged yogurt
1/2 cup fine sev

Preparation for Kachoris:-

Mix all the ingredients and knead into a firm dough by using a little water at a time.
Keep it hard and firm. Cover with a wet cloth and leave for 30 mins.
Divide the dough into four equal parts. Now roll them into rotis and deep fry in hot oil.
Turn them gently and fry till it becomes crisp and puffy like puris.
Let them cool down.

Assembling the Kachoris:-

Keep one kachori on a plate and a crack a hole in the centre of it.
Fill the kachori with potatoes, boiled chole, sprouts, add spices, papadi and lightly mash the dahi bhallas.
Fill it with 3 to 4 tbsp of yogurt.
Add green chillies and onions, then drizzle with the green chutney, tamarind chutney, and chopped coriander. Finally sprinkle the sev on top.

Serve the yummy kachoris as a evening snack or a tea party snack. Enjoy the delicious chaat from our kitchens to yours.
